Happy... that hubby picked up chickens and they are all snug in the freezer.
Waiting... for the beef and turkeys to come next.
Ordered... onions and will picking them up soon.
Amazed... at how many green peppers we harvested. Now we are eating fresh and chopping and freezing for the winter.
Got... a phone call that on this coming Monday we can pick some crab apples at a friends house.
So that means... more jelly making.
Starting... to bring in the other apples and preserving them. Thinking apple pie filling, more apple sauce, apple butter, dried apples.
Finally shredded... up zucchinis and have enough for 22 dozen for this zucchini muffin recipe. (more might be coming, hopefully)
Need to... freeze the basil harvest.
Dreaming... of making pumpkin butter, pies, and pumpkin scones. ( yes, I said pumpkin scones! )
Thinking... of lighting our first fire in the wood stove this year.
Admiring Hubby's work... he cleaned up the raspberry patch for me. [o= And he has been is cleaning up raised beds in the garden. He is such a sweet hardworking man.
Watching and waiting... for the Italian Plums and certain apple trees to be ready to pick.
Thankful... for a hubby who steps in and helps when I feel overwhelmed with preserving.
Remembering... the year we had a bumper crop of apples and had to pick apples for 7 hours in the first snow of the year on Thanksgiving week end.
Thinking... of all the things I need to do before the Canadian Thanksgiving dinner celebration THIS week end. We host the extended family dinner and 20 are expected.

Oh my dearest, sweet Mary-Girl! You are so busy, your harvest is blessed! Wow, that's a load of green peppers! I was thrilled that I came home with about 7 of them from my garden at Christine's, LOL! We made what my mom always called "Italian Salad"...it's just peppers and onions, cut into about 1.5 inch (big bite-size, but not small chopped-size) squares, plus halved-tomato-quarters (quarter the tomato and then cut each wedge in half, so it's bite-size also), tossed in a good standard Italian dressing like Wish-Bone brand, then add salt and pepper to taste. So simple, so good with the crunchy peppers!

ReplyDeleteNo we just flash freeze them in the freezer. What I mean by that is we freeze them on cookie sheets in the freezer and then we store them in freezer bags in the freezer. They way they stay loose and easy to get when we need them. And so easy to measure only what we want too. [o=

Thanks! I think I'm going to do that with onions, then, as well. If I find a good sale on sweet onions, I'll light a few candles (helps burn off the tear-making vapors), then put my chop wizard to work...it chops them quickly, all I have to do is thick-slice them.

ReplyDeleteWhat a wonderful bounty of produce God has provided for your family. I have apple sauce bubbling in the crock pot. I remember my mother making it in a big black pot outside. I'm making a much smaller portion but it makes my home smell like autumn and fills my heart with joy. This was a beautiful post and I just praised God for you!
